As an introduction to the country’s limestone karst region, you will pause to take in the sweeping views from a castle that overlooks the Gulf of Trieste. The culinary experience unfolds at a charming local family homestead, where a husband and wife grow and prepare herbs and dishes themselves. You'll discover the herbs they cultivate for culinary and medicinal purposes, such as sage, fennel, and balm mint. The karst terrain also nurtures the growth of fragrant lavender, adding to the region's aromatic allure. As you will discover during the lunch that follows, many of the herbs have been used in the dishes. Visit the site of the first Olympic Games and learn about its glorious history. Then head to the beach and spend the rest of the day basking in the sun and swimming in the warm, sparkling waters of the Ionian Sea. Even though the temples and monuments have disappeared and only the ruins are left, you can’t help but to envision the grandeur of the Temple of Zeus, one of the seven wonders of the ancient world. The site was a sanctuary even before the stadium was built and the games took place.

The famous stadium, the largest of its day, is entered through a long, tunnel-like passage constructed in Roman times. Today, you can stand at the starting line and imagine the roar of the spectators seated on the marble benches, as the athletes took their marks. Reboard your coach and head to the beach to bask in the sun and swim in the sparkling Ionian Sea. Enjoy use of a sun bed and umbrella at the main beach, as well as a complimentary refreshment. After departing from the pier, you will enjoy a leisurely drive along the gorgeous French Riviera to Monaco. During the walking tour that follows, you will see highlights such as the monumental Oceanographic Museum, which rises out of a sheer cliff overlooking the sea. Prince Albert I founded the museum in 1910 and its aquarium is among the best in Europe.

The Cathedral of Our Lady of the Immaculate Conception is another icon. Prince Rainer III and Grace Kelly were married here in 1956 and both are buried in the church. The cream-colored facade was constructed with Italian granite starting in 1875 and it took more than 10 years to finish the entire cathedral, which is the largest in Monaco. Interior visits may not be possible if activities are taking place in the cathedral.

After free time to explore a bit further, you will continue on to Monte Carlo, driving along a section of road where the annual Monaco Grand Prix race has been held since 1929. You will notice the road is winding with hairpin turns, a signature of this Formula One race.

You will also see the grand Monte Carlo Casino, which opened in 1863. Designed by Charles Garnier, the architect behind the Paris Opera, the casino is an architectural masterpiece that may well be the most recognized building in Monte Carlo. Free time follows, after which you will rejoin your coach and return to Villefranche.

Explore a wetland nature reserve on reclaimed land that now supports an abundance of indigenous flora and fauna. Salt pans covered much of this area for centuries, and it wasn’t until about 50 years ago that the brackish wetlands became an important habitat for flora and fauna. As you walk through this wonderfully unique ecosystem, a naturalist will describe the transformation of the reserve and how environmentalists prevented it from becoming an industrial zone. Nearly 250 types of birds—more than half the species in the entire country of Slovenia—have been spotted there, including Eurasian reed warblers, black-winged stilts and squacco herons. You can also expect to see a huge variety of colorful butterflies flitting about. Halophytes are among the more intriguing plants found in the wetlands, as they thrive in salty ground. From a distance, these succulents appear to have ice on their leaves, but it is actually dried salt that the plants exude from their glands.

Following your approximate two hour drive to the Alpine town of Lake Bled, you’ll have different options to enjoy from a walk around the picturesque lake to visiting a medieval castle visit, all during your free time and at your own expense. After World War II, this was one of the most appealing state residences and drew many people who were attracted by the beauty of this town. Today new pilgrims have been discovering this tranquil and lovely place.

After a guided walk through Ljubljana, a medium sized European city, you’ll have time to explore your own pace. It offers all the friendliness of a small town and at the same time has everything that a capital should. This city of culture boasts one of the oldest philharmonic halls in the world. Every year it hosts more than 10,000 cultural events ranging from prestigious concerts, theater performances and fine art exhibitions.

You’ll journey to the ancient place of Mayan pilgrimage known today as Chacchoben, also known as "The Place of Red Corn". At the pier, you’ll be greeted by a bilingual guide who will direct you to an air-conditioned bus. Onboard the bus your guide will brief you on the interesting history and unique attributes of this sacred Mayan site. Upon arrival at Chacchoben you’ll be surrounded by jungle. Your guide will escort you through the ruins, giving you a complete explanation of the sacred temples and other structures seen there. See original red paint on the stucco walls of one of the pyramids and the temple where a mural was found showing the astronomical positions of the planet Venus. You’ll have time to climb the Gran Basamento taking you above tree level. Here archaeologists found ceremonial offerings dating to around 1000 B.C. Your guide will also explain about the wildlife and medicinal plants that are used by the modern-day descendants of the ancient Mayan people. During the tour, you will reach a structure known as the Gran Basamento, which is not a pyramid, but an elevated platform.

Stroll through a bustling market taking note of the ingredients and then join a chef who will show you how to prepare paella from scratch, an iconic dish that will be your lunch. The items at the Central Market are locally sourced, so they truly represent the ingredients found in the regional cuisine. After meandering through the stalls, interacting with the vendors and sampling some of the delicacies, you will walk to a nearby restaurant for a paella workshop. The chef will show you step by step how to prepare authentic paella Alicante-style. You will have seen many of the ingredients in the market, which will make the preparation all the more relevant. Although the city of Valencia just to the north is known as the birthplace of paella, the version made in Alicante is much the same.
